Gluten Free Apple Clafoutis

Love an apple pie? Us too. But if we’re being honest, the whole process of making flaky pastry dough – mixing, grating, chilling, rolling, and coaxing it into a pie dish can feel a little fussy. This gluten-free apple clafoutis is quite the opposite. It’s elegant, custardy, and tastes like a cross between a Dutch baby pancake and a tart. The best part is that it sneakily comes together in under 30 minutes. It’s one of those seasonal desserts that makes people think you went all out. Aka the perfect holiday meal contribution, no?

Ingredients:

  • 3 apples

  • 2 tbsp butter (or avocado oil to make the recipe dairy-free)

  • 4 eggs

  • 1 cup milk of choice

  • ½ cup 1:1 gluten-free flour (we used King Arthur brand for this recipe)

  • 3 tbsp sugar

  • Vanilla bean paste, to taste

  • Pinch of salt

Method:

  1. Pre-heat your oven to 375°F. 

  2. Slice the apples into thin, rustic pieces.

  3. Heat an ovenproof skillet and melt the butter, coating the bottom and sides of the pan.

  4. Add the apples and cook for 2-3 minutes, just until they’re softened but still holding their shape. Remove from heat.

  5. Combine the remaining ingredients in a blender and blend until smooth. The batter should be thin.

  6. Use your spatula to spread the apples into an even layer in the skillet, then pour the batter over the top of the apples.

  7. Bake for 20-25 minutes, until golden brown and slightly puffed.

  8. Remove from the oven and let cool.

  9. Dust with powdered sugar and enjoy warm. (Pro tip: this makes a phenomenal brunch or breakfast with coffee!)
