Caramel Apple Chia Pudding

As the leaves start to turn and that crisp fall air sets in, there’s nothing more comforting than a recipe that feels like fall in a jar. Enter: Caramel Apple Chia Pudding. With fiber-rich chia seeds and apples to support digestion and keep you full, plus warming spices that help circulation and balance blood sugar, this pudding is both delicious and functional. To take it a step further, we added a spoonful of Metabolic Guard, an herbal blend with cinnamon, ginger, and L-carnitine that work to support healthy insulin sensitivity, hormone balance, and energy. Best of all? It comes together with just a few simple steps and keeps in the fridge all week, making it the perfect make-ahead breakfast or snack when life gets busy.

Ingredients:

  • 6 pitted dates
  • 2 cups milk of choice (i used almond)
  • 2 cups high protein greek yogurt
  • 2 apples - chopped
  • ¾ cups chia seeds
  • cinnamon to taste
  • vanilla bean paste to taste
  • salt to taste
  • 1 tablespoon Metabolic Guard 

Method:

  • Soak pitted dates in hot water for 30 minutes and set aside
  • Add chopped apples to a small saucepan with a splash of water, cinnamon, and a pinch of salt and simmer covered on low until softened.  Set aside to cool.
  • In a blender, add drained softened dates, cinnamon, salt, metabolic guard and milk and blend on high for 1-2 minutes until dates are totally broken down and combined into milk
  • Pour the mixture into a large bowl and add 2 cups of yougurt
  • Whisk in the yougrt until smooth and add chia seeds, whisking again to combine
  • Let the mixture stand for 30-60 minutes until chia has soaked up the liquid
  • Pour into containers of choice and top with stewed apples
  • Seal containers and keep in the fridge for up to 1 week
