Cooling Herbal Popsicles

When the afternoon feels relentless, nothing hits quite like an ice-cold popsicle, especially one that’s as nourishing as it is stunning. These herbal pops are infused with tart hibiscus, delicate rose, and mineral-rich violet leaf – all refrigerant herbs traditionally used to cool the body from the inside out. Brew a batch, freeze them overnight, and enjoy a refreshing, herby treat the next day. They’re a total hit with both kids and adults!

You’ll Need:

  • 2 tablespoons dried roselle hibiscus

  • 2 tablespoons dried rose petals

  • Optional: add 3 tsp of Rosehip Relief

  • ¼ cup dried violet leaf

  • 1 quart water

  • Sweetener to taste (optional)

  • Pinch of salt

The Method:

  1. Combine all herbs in a glass quart jar and pour hot water over the top. 

  2. Allow the mixture to infuse for 4-6 hours, or overnight for a stronger brew. 

  3. Strain the infusion into a spouted bowl, then stir in sweetener (if using) and a pinch of salt. 

  4. Pour the herbal infusion into popsicle molds (or ice cube trays as an easy alternative!). 

  5. Freeze overnight, pop them out, and enjoy on a hot summer day!
