Gluten-Free PMS Chocolate Pretzel Cookies

You know how you need sweet, salty, crunchy, chocolate, and potato chips all at once sometimes?! These are actual heaven with a healthier version of m&ms, gluten-free pretzels, and chips. Yes, you can put potato chips in cookies and it’s life-changing. These cookies are the perfect sweet treat to have on hand for those PMS days when you’re craving a little something to satisfy your cravings or just in general — you don’t need an excuse to crave a good ol’ cookie.

Tip: take one dropperful of GlucoBitters before indulging in this sweet treat to blunt a sharp blood sugar spike.

Ingredients:⁣

  • 1 stick of room temp softened butter⁣
  • 3/4 cup coconut sugar⁣
  • 1 egg⁣
  • 1 tsp vanilla extract⁣
  • 1 & 3/4 cups gluten free oat flour⁣
  • 1/2 tsp baking soda⁣
  • 1/2 tsp salt⁣
  • 1/2ish cup (I prob used more lol) @unreal.snacks brand dark chocolate m&ms (they don’t have any corn syrup / soy lecithin / artificial colors which is awesome)⁣
  • 1/2 cup @sietefoods kettle cooked potato chips⁣
  • 1/2 cup @quinnsnacks gluten free pretzels⁣
  • top with super flaky sea salt!⁣

Directions:⁣

  • Preheat the oven to 350F⁣
  • Cream the butter and sugar together until you get this sort of uniform paste⁣
  • Add the egg and vanilla and either mix by hand if or use a hand mixer
  • Once that’s fully uniform, add the baking soda and salt, then the oat flour little by little mixing as you go ⁣
  • Fold in the m&ms, chips and pretzels
  • Arrange on a silicone baking tray, top with some flaky salt and bake for 10 minutes!⁣
