High-Fiber White Bean Salad

We can’t get enough of beans. These tiny powerhouses are packed with fiber, making them your digestive system’s best friend. Plus, they’re a solid source of plant-based protein, and we’ll take any opportunity to sneak in extra protein! They’re low in fat, high in nutrients, and have an incredible ability to support cardiovascular health.

Ingredients:

  • 1 can white beans, drained and rinsed
  • 1/2 cup cherry tomatoes, chopped
  • 1/4 small red onion, diced

Simple Lemon Dressing:

  • Juice of 1/2 lemon
