Vegan Tacos with Coconut Wraps, Spicy Walnut Meat & Cashew Sour Cream

Happy Wednesday, friends! How has your week been so far? After being in somewhat of a funk since the summertime, I’m finally having one of the best weeks/months I’ve had in a long time. It’s largely because I’ve been doing my favorite thing in the world: reading and researching. When I first started my blog, I spent around 8 hours a day researching and reading books in order to self-educate regarding the realms of health, herbalism, and nutrition. But as life has gotten crazier, and I’ve focused on more left-brained tasks such as creating our parasite cleanse (which will be back in stock soon!), my reading time has dwindled. There’s so much that goes into building a business, creating a new website (coming very soon!), and fulfilling orders. The #1 thing I love to do is create, but they always say “art imitates life,” and I wasn’t doing enough of that good old life stuff in between the work. This week I’ve allowed myself to sink into as many books as my heart desired, so that I could get inspired with a fresh perspective for new posts. I also treated myself to a soul-healing retreat this past weekend in the Berkshires, which I shared a bit of on Instagram! (Check out the gorgeous Kundalini Yoga setup below)
One of the books I read this week changed my life. I finished it in under two days because I couldn’t stop inhaling the knowledge that resonated with me so deeply. It was written by Anthony William, a medium who was given his gift at the age of four when the voice he refers to as Spirit told him his grandmother had lung cancer. At the time, his family was shocked that he even knew what the word cancer meant… and his grandmother felt absolutely fine. But sure enough, one week later, she received a chest x-ray that revealed she was indeed suffering from cancer. From that day on, Anthony said he’s been able to receive guidance from Spirit with each and every person that he comes into contact with. He has healed thousands of people by receiving intuitive messages regarding exactly what is wrong with them, and how to fix it. His incredible track record means that his wait list for a session is years long, so the next best thing is the beautiful book he has put together – Medical Medium.
Even if you don’t care about the ‘medium’ aspect of this book – it has changed my life purely due to his health advice. The revelations he made in this book are mind blowing. I have always been guided by my intuition and research that there are many bugs invading our bodies thanks to our chemically polluted environment (I mean duh, I’m the parasite cleanse girl lol) – but this book truly confirmed everything for me. When I was very ill – the day I had to run out of my chemistry class with jaundiced skin, feeling like I was going to die – the only abnormality doctors could find relating to my severely inflamed liver was an antibody count for Epstein Barr Virus. They told me that since I had already formed antibodies, though, that the virus couldn’t possibly still be harming me. Anthony completely blows that theory out of the water with his breakdown of the 4 stages of Epstein Barr. He says that it hides and waits until the body is stressed or emotionally depleted and invades the spleen, liver, thyroid, and eventually the nerves (leading to MS). He goes in depth about how EBV is behind Chronic Fatigue Syndrome, Rheumatoid Arthritis, adrenal fatigue, thyroid disorders, autoimmune disorders, Hashimotos, Lyme Disease, depression, and so much more. You can read an excerpt here to gain further clarity because I know this is a lot to take in. It may sound crazy, but read the book and decide for yourself. I have been following his 28 day cleanse for 10 days now and I feel incredible. I’ve had a wart on my thumb since the age of 15, when I was forced to receive the Gardasil vaccine (which contains the HPV virus). For the first time sine then (I’m now 22), the wart is completely flat and peeling off. His recommendations work, and they are simple – eat fruit, give your liver a break from fat, utilize green foods such as algae and seaweed, and pay attention to what anti-viral herbs you need. I’m combining his dietary cleanse with my parasite cleanse and my results are better than ever.
ANYWAY – let’s get to this recipe!! It’s adapted from a lovely blog called AvocadoADayNutrition and I added my own twist to the spices and flavor. You will be hooked after one bite. I didn’t expect “nut meat” (yes, have your laughs) to be so delicious but I promise it tastes exactly like the real thing. I even got my dad (who eats meat three times a day) to taste it and he absolutely loved it. The next phase is getting him to actually eat vegetables along with it, but we’re going to choose our battles wisely for now. Small victories, right? (Seriously – he won’t even try an avocado! YES, you read that right, the most holy food of the plant kingdom revered by guacamole addicts worldwide. Oh, and my mom and dad BOTH think cilantro tastes like soap (??!1!) but apparently there’s a genetic explanation for that. I don’t buy into that theory whatsoever, because I will gladly bathe in cilantro if that was a thing. That means I’m either adopted, an alien, or the science is wrong. Looks like I’m going to have to open my own extra terrestrial cilantro spa, huh?)
Let me tell you. The wraps I used in this recipe are F-A-B-U-L-O-U-S (shout out to Fabolous for forever scarring my ability to spell that word…)
But seriously. I found these wraps on Amazon the other day and had to do a double take on the ingredients. Coconut meat, coconut water, and himalayan sea salt. And no – I’m not sponsored or paid by the company whatsoever. I’m just a girl who really likes coconut, and reaaaally, really likes tacos. You can check them out on Amazon here.
You will need:
* 1 + ½ cups walnuts, soaked for 2 hours in water and drained before blending
* 2 tablespoons organic coconut aminos (a lovely, healthy soy sauce replacement)
* ¼ cup sun-dried tomatoes
* ½ teaspoon organic adobo
* 1 teaspoon organic cumin
* 1 teaspoon organic chili powder
* optional: ¼ teaspoon chipotle pepper + pinch of cayenne pepper
* 1-2 cloves garlic, chopped
Grab your food processer or high speed blender (food processor works best, but I’ve made it in my Blendtec as well). Place the walnuts, coconut aminos, sun dried tomatoes, spices, and chopped garlic in the food processor and blend until it forms a crumbly, yet clumpy consistency that resembles ground beef. Don’t blend too long or else you’ll get a paste.
THE SOUR CREAM:
There truly isn’t a simpler sour cream recipe out there. Here’s all you need:
* ½ cup cashews, soaked 2 hours in water and drained before blending
* ¼ cup water
* juice of 1 lemon
* ¼ teaspoon salt
Again in your food processor or blender, blend the drained cashews with the water, lemon juice, and salt. If you like a thinner consistency, add another tablespoon or two of water.
HOW TO GET THE FINISHED PRODUCT:
Since the coconut wraps are raw and malleable, I like to lightly toast them in the oven using the taco rack shown above so that they retain a nice shape. I only toast them for about 30-45 seconds at 375* F (that will depend on your oven. Just take them out as soon as they start to look golden, because they burn very quickly).
Inside my tacos I used romaine lettuce, tomatoes, peppers, cilantro, a spoonful of guacamole, and of course the walnut meat and sour cream we just made above. The final product is unbelievably healthy and only uses whole plant foods. It’s grain-free, vegan, and even paleo because the wraps are purely coconut-based. Enjoy! x
