Double Trouble: Peanut Butter Protein Cookies & Peanut Butter Green Smoothie

Diamonds are not a girl’s best friend. That would be cookies. Cookies are my best friend. Especially cookies that are peanut butter flavored and secretly made with zucchini. Yeah…. today is a good day!
I’ve been working hard writing the e-book that will come in the parasite cleansing kit Lily and I are working on. I can’t wait to share it with you guys – Wednesday we plan on having a girl’s day dedicated to grinding all of the fresh herbs and packing up the first batch of capsules. What have you been reading lately? Since I’m pretty sure the world is going to end soon (just kidding… or am I?), Nick and I bought “Unlearn, Rewild” on Amazon the other day. It’s all about how to harmoniously live within nature, totally off the grid. I’m kind of a book hoarder. And an Amazon addict. Like the time I bought this trampoline at 3 A.M. last week. (BEST. PURCHASE. EVER. You betcha I’ll be blogging about it soon!)
Anyway, enough of my ramblings! The real point of this post was to tell you that a) my favorite protein powder company (Source Organic) sent me some of their brand new Peanut Butter protein powder, and b) it’s delicious. Get this: the ONLY ingredient is fresh organic ground peanuts. I usually don’t consume peanuts due to the risk of aflatoxins, but their protein powder has been tested not only for aflatoxin mold, but heavy metals as well. They also harvest the peanuts from an arid area where mold is unlikely to grow. You guys know how I like a company that does their homework 😉
First up is the smoothie. Although it’s green, I promise you can hardly taste the spinach! It mostly tastes like pb banana, and with a few drops of stevia can fix up any sweet tooth.
Peanut Butter Green Smoothie
☻ 1/2 cup spinach
☻ 2 frozen bananas
☻ 1 apple, chopped
☻ 1/2 cup vanilla almond milk
☻ 2 scoops Source Organic peanut protein
…If I was feeling dangerous, I would even add a tbsp of Nuttzo 😉
Next up are some peanut butter chocolate chip cookies. Okay… these are freaking fabulous. I’m not even going to try to be modest on this one. They’re fluffy, light, moist… and if I wasn’t braindead right now, I would pull out a thesaurus and hit you with some much more creative adjectives. The best part is that there’s ZUCCHINI hidden in them. Seriously. Looks like I can just have these for dinner….
Peanut Butter Chocolate Chip Cookies
☻ 2 cups zucchini, shredded and thoroughly patted dry
☻ 1 cup 0% Greek yogurt
☻ 4 scoops Source peanut protein
☻ 1 cup coconut sugar
☻ 1/2 cup gluten free oat flour
☻ 2 heaping tbsp. Nuttzo or nut butter of choice
☻ 1 egg
☻ 1/2 cup chocolate chips
☻ 1 tsp. vanilla extract
☻ 1 tsp. baking soda
☻ small pinch of sea salt
Shred your zucchini with a cheese grater and pat it dry (very well)!
Mix the zucchini in with everything else — no need to separate wet and dry ingredients.
Chill your dough for 20 minutes to firm it up.
Grease a baking sheet with coconut oil or grass-fed butter, then drop cookies into rounds.
Bake at 350 F for 15 minutes or until a toothpick comes out clean.
