Valentine’s Day Is Coming… Chocolate Ganache Truffles!

Who is your valentine this year?! Whether it’s your boyfriend, girlfriend, best friend, or even your mom… why not give them CHOCOLATES! And I’m not talking store-bought ones that have been sitting CVS for years.. I’m talking hand-made, gourmet, rich chocolate truffles right from the heart. There is a chef in everyone and this recipe is foolproof – it’s time to impress your love bug!
(Don’t mind the middle one looking a little lumpy, daylight was wasting and I took them out of the fridge early to make sure I got a good picture). You can make these any flavor you want by playing around with the extract. Some variations I’m going to try are mint chocolate truffles and almond truffles (mint extract and almond extract!) 
You Will Need:
  • 8 oz dark chocolate chips (I used Equal Exchange Organic Chocolate Chips from whole foods)
  • 1/2 cup organic heavy cream
  • 1/2 tsp vanilla extract (you can also use chocolate extract for SUPER richness)
  • cacao powder for rolling


  1. Put the heavy cream in a small pot on low heat. Bring it to a boil while stirring constantly.
  2. In a new bowl, mix your chocolate chips with your vanilla extract.
  3. Once your heavy cream is boiling, pour it into your bowl of chocolate chips. Stir quickly with a fork until everything is smooth and melted. 
  4. Put the chocolate in the fridge for about 4 hours until it sets completely!
  5. Take the chocolate out and let it get to room temperature. 
  6. Roll it into balls and then roll your balls in your cacao powder.

I got some mini baking cups for my truffles so that they look pretty and presentable! You can decorate your own box and fill it with these little guys for Valentines Day. I truly believe there is nothing better than a handmade present from the heart…. and DEFINITELY nothing better than chocolate. 😉
